La Colombiana Hamburger started in 2020, during the COVID pandemic. It was August, and I had just stopped working, so I began cooking on the porch of my house using a Blackstone griddle, making burgers.

The inspiration came from a small burger stand I saw in Colombia. I tried a burger there that was super clean, simple, and full of flavor—I loved it. That inspired me to create my own version. I came up with my own recipe, and all of my sauces are original and made by me. The seasoning I use for the burger meat is also completely original.

That’s how everything started. I began with burgers, then expanded into empanadas, cheese arepas, and Colombian-style hot dogs.

After some time, I worked there for several months during COVID, but eventually things slowed down and I started working in something else. I enrolled in culinary school, studied there for two years, and graduated.

                 

After that, I joined a program called the Launching Diverse Food Entrepreneur Program. That program is what brought me here to the Fitchburg Public Market. It gave me the opportunity to open my stand in August 2024, and that’s when we officially opened here.

From then until now, this has been a fully independent stand, meaning I do everything myself. I’ve now expanded my menu—I make sweet plantains, salchipapas, arepas—everything focused on Colombian street food.

That’s what I want to showcase: the true flavor of Colombian fast food. And here we are, continuing to work hard and move forward.
